Walnuts or Almonds Maamoul

INTRODUCTION

You can still enjoy a piece of dessert while on a Low Carb/Keto Diet.

Maamoul are traditional Lebanese shortbreads, stuffed with either dates,

pistachios, walnuts and almonds. Since dates and pistachios are not approved of

on low carb diets, one can still enjoy the walnuts or almonds stuffed maamoul.

THE RECIPE

THE SHORTBREAD

1. 200g almond flour

2. 50g coconut flour

3. ½ teaspoon baking powder

4. 100g melted butter

5. 1 tablespoon rose water

6. 1 tablespoon orange blossom water

7. 1 tablespoon stevia or any other low carb sweetener

THE STUFFING

8. 1 cup crushed walnuts or almonds

9. 1 tablespoon stevia

10. 1 tablespoon Sukrin 1 or erythritol

11. 1 tablespoon rose water

12. 2 tablespoons orange blossom water

13. ½ cup Sukrin Melis confectioner sweetener for dusting the

maamoul

THE METHOD

STEP 1

For the shortbread, mix the almond flour, coconut flour, baking powder,

sweetener and melted butter. Cover well and leave in the kitchen overnight to

rest.

STEP 2

In the morning, add the rose water and orange blossom water to the shortbread

dough and knead well. Divide the dough into 30 mini balls.

STEP 3

Put the walnuts/almonds in a food processor with the stevia and erythritol or

sukrin1 and process leaving it a little coarse.

STEP 4

Empty the mixture in a small bowl and mix it well with the rose water and

orange blossom water. Form smaller balls and set aside.

STEP 5

Take a shortbread ball and knead it with your hand then make a hole in the

middle of the shortbread using your thumb and stuff it with the walnut/almond

ball.

STEP 6

Close the shortbread ball and place it in the maamoul wood mold, press it with

your palm then turn the mold to the opposite side and hit it on a hard surface to

bring the maamoul out.

STEP 7

Place the maamoul on a previously prepared baking cookie tray with parchment

paper. Repeat the same until all shortbread balls are stuffed and ready.

STEP 8

Preheat oven to 350F then bake the maamoul for 25-30 minutes checking on it

continuously. Once golden brown, take the tray out and set aside to cool down.

Once cold, you can dust the maamoul with Sukrin Melis or any other confectioner

sweetener or just leave it plain. Enjoy!
