INTRODUCTION

I enjoy preparing this succulent low in carbohydrates marinara sauce from scratch. It is perfect for pizzas and so many other keto recipes to be posted on this site.

THE RECIPE

1. 1 kg Roma tomatoes

2. 1 medium onion

3. 10-12 big garlic cloves

4. ¾ cup fresh basil leaves

5. 5-6 tablespoons virgin olive oil

6. 1 tablespoon Lebanese zaatar

7. 1 green chili pepper if you like it spicy

8. 1 teaspoon Himalayan salt

THE METHOD

STEP 1

Preheat oven to 400F and prepare a 16 x 12 inches rimmed baking tray with parchment paper and set aside.

STEP 2

Cut tomatoes into four pieces each and place on parchment paper of the rimmed baking tray. Put the garlic cloves, sliced onion, basil and zaatar and pepper if using any.

STEP 3

Sprinkle the salt and olive oil and put in the middle rack in the ocen and bake for 30-40 minutes stirring them every 10 minutes.

STEP 4

Take out from oven and let cool down for 10 minutes before tossing them all in a food processor and processing them on high speed.

STEP 5

Put in jars and freeze for later use.
