With a Lebanese Twist

I can completely lose myself in this uniquely low in carbohydrates pizza. It is fit for Keto dieters who would love to enjoy the pleasure of eating pizzas even when on a diet!


1. 2 cups mozzarella cheese

2. ½ cup kashkaval cheese

3. 2 tablespoons Philadelphia full fat cream cheese

4. 1 tablespoon heavy cream or sour cream

5. ½ cup almond flour

6. 1 tablespoon coconut flour

7. 1 tablespoon whey protein if available (optional)

8. ½ teaspoon Himalayan pink salt

9. ½ teaspoon garlic powder

10. ½ teaspoon onion powder

11. 1 teaspoon Lebanese zaatar

12. ½ teaspoon fresh basil minced

13. 1 large egg

For the Toppings

1. 1/3 cup marinara sauce (recipe posted on site)

2. 9 slices tomato

3. 1 medium red onion sliced into rings

4. ½ cup pepperoni

5. ½ cup fresh mushroom slices

6. 10 pieces black olives pitted

7. 1 cup shredded mozzarella cheese

Pizza Dough


In a large bowl mix almond flour, coconut flour, whey protein, salt, garlic powder, onion powder, zaatar and basil and set bowl aside.


In another small bowl put the mozzarella cheese, kashkaval cheese, cream cheese and microwave for 1 minute 30 seconds. Take out and mix with heavy or sour cream and egg and mix well.


Start adding the flour mix gradually. Add half of the flour and mix well with the cheese then add the other half and mix until well combined until a dough forms.


Divide the dough into four equal balls. Place a parchment paper in an 8 x 8 inches square or round pan. Place the ball in the pan and with an adhesive or nylon paper flatten the dough until it spreads evenly along the sides of the pan. Repeat with the rest of balls using other pans.


Preheat oven to 450F. Place the pans two at a time on the second rack of the oven from the bottom and bake 15-20 minutes or until golden and crispy. Take out and repeat with the other two trays. Once done, leave to cool down on a rack. Leave one pizza crust in the tray and place the others in an airtight bag and freeze in the freezer for later use.


Top the dough with low carb homemade marinara sauce then add the pitted black olives. Place the tomato slices on top followed by the onion rings and pepperoni if needed. Place tray in oven and bake it from the top for 5-10 minutes then take out and spread the cheese and put back in oven and let the cheese melt and turn golden for another 3-5 minutes. Take out cut into four pieces and enjoy!
